What is the standard military doctrine in this situation (if it is realised ) ? Advance so the Russians carry on fighting and kill as many as possible (Falaise pocket ), or attempt to capture as many as possible ?

There could be Option 3 … let them wither on the vine, running out of amminition and rations until they surrender. I suspect the RU morale is already sufficiently depleted that minor attacks (air, artillery or infantry) will ramp up the pressure without UA having to expend too much blood and treasure.

That would sacrifice momentum ................ not many generals would choose that unless the blood and treasure aspect weighed heavily.

True about the momentum, but once across the river, I believe the land continues as very flat and the UKF would have no natural anvil against which to squash the Russians. What do you think about then knocking out the Kerch bridge, and then trying to repeat the squeeze on the Russian force ? They would, of course, be able to re-supply by ship, but that is much more cumbersome than by rail, and Ukraine has probably carried on manufacturing its Neptun anti-ship missiles.

Having just checked distances, I don't know what weapons they could use to hit and destroy that bridge.

A very humane suggestion. Mine would be to hit them hard with the aim of destroying them. No sense being squeamish, I doubt the Russians would if situation were reversed.
