If you do a degree first then you are likely to start with a 30k debt before you even get your cheque book out for the flying course, but to answer your question I would suggest something that will hone your analytical and decision making skills such as maths/computing/I.T.
One of the secrets of being a good pilot is being able to assess a situation, determine what has happened, consider the options and most importantly make a decision, all skills needed for the maths/computing course, but as others have said, there is an argument for doing the flying course first, then if it doesn't work out do the degree course later, or even at the Open University.
Three years of seniority can be woth a lot these days.

University of Leeds
I have just completed a great course at the university of leeds, Aviation technology and management BSc it also offers Aviation technology and pilot studies allowing you to obtain your ppl during the 3 year course. It is quality leeds is quality do it do it do it!!!!
