If you want to bend or twist the rules a bit, Turkish charter airlines, in general, are the place to get experience. Some of them, are somehow interrelated, so they can replace aircraft under different flight numbers, to circumnavigate any restrictions imposed on them in the more regulated world.
You can learn a lot, especially how not to do things.
This said, there might be exemptions, as my hand on experience is ofcourse limited.
